Balsamic Vinegar

Authentic balsamic vinegar is made from a reduction of pressed Trebbiano and Lambrusco grapes grown in the surrounding hills of Modena, Italy. The resulting thick syrup, called “mosto cotto” in Italian, is subsequently aged in wooden barrels via the traditional system and requires meticulous care.

 

This time-honored attention to detail results in an exceedingly smooth, dense, complex product which cannot be imitated.

 

True balsamic vinegar is rich and glossy with a complex flavor that balances the natural sweet and sour elements of the cooked grape juice in perfect proportion with hints of wood from the five types of barrels used including: oak, chestnut, cherry, juniper and mulberry.

Dark Balsamic

18-Year Traditional Style

Our finest grade of aged balsamic condimento from Modena, Italy is produced in the Traditional Style. It is aged using the Solera System for up to 18 years in chestnut, oak, mulberry and ash barrels. With a 4% acidity, our Four Leaf Quality Equivalent Condimento is exceedingly rich, complex and dense. It pairs beautifully with any olive oil in our collection for vinaigrettes, glazes or marinades. Scrumptious paired with Garlic Extra Virgin Olive Oil drizzled over fresh tomatoes, mozzarella and fresh garden greens! Use it as a drizzle on cheeses, meats, fresh fruits, or for a dessert sauce on vanilla ice cream and strawberries. Suggested EVOO Pairings: Any Ultra Premium Extra Virgin Olive Oil or Flavored Olive Oil

 

Blackberry-Ginger

Wonderfully sweet and pleasingly tart. It makes a fantastic dressing or marinade. Cask-aged to perfection, this classic balsamic is heightened with vine-ripened blackberries and exotic ginger for subtle sweetness. Combine with a drizzle of olive oil to enhance your favorite salad. Black Cherry

Rich and sweet Natural Black Cherry concentrate and other natural flavorings are combined with aged balsamic vinegar to produce a sweet, fragrant and very rich tasting product that has garnered rave reviews from our gourmet customers. Enjoy on salads that feature feta or blue cheese, or over orange and onion Sicilian salad. This tantalizing vinegar is wonderful drizzled over vegetables, salad tomatoes and strawberries. Cinnamon Pear

Has a hint of spiciness from the cinnamon and a warm unique pear taste. A great match for many of the fruity oils for a delicious marinade or salad dressing. A perfect marinade for lamb or duck, this balsamic drizzled over salads, tomatoes, ice cream or a vegetable is a sure winner! Dark Chocolate

Rich, thick, and resounds with the complexity of three different chocolates responsible for the depth of its flavor. A smooth rich dark chocolate taste that is exquisite. Drizzle over vanilla gelato and fresh strawberries for a delicious dessert, or even mix with fresh berries. Espresso

This aged balsamic vinegar is amazingly complex, with layers of authentic espresso and dark roasted coffee extract. It makes a fantastic glaze or bar-b-que base for pork, beef or chicken. Add a shot to an "affogatto float", which calls for a tall mug of vanilla gelato scoops covered with coffee. Fig

Thick, ripe and bursting with flavor. It is outstanding as a marinade or in salad dressings. Neither sweet nor tart, this balsamic exhibits a perfect whole fruit, mellow fig flavor. Perfect for soups, salads, vegetables and meats. Try this on cantaloupe or honeydew melon sprinkled with minced prosciutto and Parmesan cheese. Raspberry

This thick, rich, perfectly balanced balsamic vinegar, oozes with the natural flavor of fresh, ripe raspberries. Vanilla

Sultry, fragrant Tahitian vanilla beans are married with our barrel aged balsamic vinegar from Modena, Italy. The resulting collaboration is intoxicating, as it is exotic. Intense vanilla bean flavor, this balsamic is excellent for cakes, ice cream and heavy cream based dishes. Vermont Maple

We have searched high and low, and it appears that we have created the first of it’s kind, an Aged Pure Maple Balsamic, using real 100% pure maple produced at a small family farm in Vermont to infuse Balsamic Vinegar from Modena Italy. This balsamic is outrageously good! Wild Blueberry

White Balsamic

12-Year Premium White

Made with White Trebbiano Grape Must, our White Balsamic undergoes the cooking and barrel aging process of Balsamic Vinegar of Modena however it is not carmelized. The result is a crisp, tart vinegar with a touch of sweetness. Extremely adaptable. Suggested EVOO Pairings: Any Ultra Premium Extra Virgin Olive Oil or Flavored Olive Oil

 

Alfoos Mango

This White balsamic vinegar pairs exquisitely with our Persian Lime EVOO. Also fantastic with shrimp, scallops, salad, and in salsas for a tropical, sweet-tart twist. Drizzle over steamed rice to add a beautiful sweet fruitiness. The Alfoos Mango cultivar is considered by many to be one of the best in terms of sweetness, richness and flavor. Suggested EVOO Pairings: Blood Orange, Eureka Lemon

 

Blenheim Apricot

A white balsamic, both sweet and tart with an intensely aromatic aroma of honeysuckle and picked with a faint green tinge. Great with grilled chicken, as a glaze or served with cheese. Cara Cara Orange-Vanilla

This confectionary white balsamic Condimento is made from creamy, sultry Madagascar Vanilla and bright, citrusy Cara-Cara Orange. It's absolutely delightful in vinaigrettes, marinades, fruit salad, sparkling water, or drizzled over yogurt and vanilla ice cream. Coconut

This balsamic, infused with all natural coconut flakes, transforms a simple dish into ambrosia or a sweet and sour. Use this balsamic for a superb drizzle over grilled chicken or shrimp. Gravenstein Apple

The Gravenstein Apple is an incredibly hard to find varietal due to the difficulty farmers have cultivating it. In addition to contending with a very finicky tree, it's also not an apple that travels or stores well so it is best enjoyed during its relatively short season and isn't typically shipped far. It's grown in pockets up the coast of Northern California and prized for its amazing ambrosia perfume, and crisp, sweet-tart cream colored flesh. Golden Pineapple

Golden pineapple balsamic is sweet and tart with the heady aroma of fresh ripe pineapple. This amazing, zesty balsamic is the perfect complement to fruit salads and fresh berries. Try pairing with soy sauce, ginger and our Garlic EVOO for an amazing marinade. It mixes well with a chicken salad topped with pineapple chunks, and is delicious on grilled shrimp, peppers, and onions. Specialty Balsamic

Denissimo

Our Denissimo is made from Trebbiano grape must which is naturally caramelized and cooked down to an even greater extent, and aged for EVEN longer in the traditional “Batteria” of Modena. Our exclusive “Denissimo” contains less than 1% barrel aged Italian red wine vinegar for pro-biotic effect, and slowly ages in five different casks comprised of mulberry, ash, oak, juniper, and cherry wood. This exquisite and exceedingly rare 1.36 density balsamic is extremely complex boasting flavor notes of cherry wood, dried fruits, raisins, figs, along with hints of dark chocolate and malt. Serve with your finest cheese plate, drizzle over melon or berries, use as a finishing glaze for roasted meats or poultry, adorn your grilled vegetables, make your desserts swoon.
