Preheat oven to 400 degrees. In an oven safe baking dish, drizzle EVOO and heat for 5 minutes. Remove hot baking dish. Add fillets and drizzle EVOO, salt, pepper and chopped herbs on top of the salmon. Bake for about 5 minutes (depending on thickness). Remove and carefully flip fillets. Drizzle EVOO and add salt, pepper and herbs. Bake another 5 minutes. Remove and check doneness with a fork. Drizzle Apricot Balsamic Vinegar over each filet. Garnish and serve immediately.
Delicious with roasted zucchini or asparagus, quinoa or rice and fresh fruit.
NOTE: bake salmon, uncovered for 4-6 minutes per 1/2-inch thickness.
