  • 1 bunch kale, stems removed and chopped
  • juice 1 lemon
  • 1 mango, pitted, skinned and chopped
  • 1 cup blueberries
  • 1 avocado, peeled and pitted
  • ¼ cup pepitas
  • Mango Balsamic Vinegar
  • Koreiniki Extra Virgin Olive Oil


  1. In large bowl, add the kale, lemon juice, a drizzle of oil and a little salt. Massage until the kale starts to soften and wilt, 2-3 minutes. 
  2. Toss in remaining ingredients. Drizzle with fresh extra virgin olive oil and balsamic vinegar.
