Ingredients

  • 2 cups flour
  • 1/2 cup sugar (we used Stevia)
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon grated lime rind
  • 1/2 cup raisins
  • 2/3 cup buttermilk (we used half n half)

Directions

  1. Preheat oven to 450.
  2. Stir first 6 ingredients in medium bowl. Cut in EVOO with pastry blender til crumbly.
  3. Add raisins and buttermilk, stirring just until dry ingredients are moistened.
  4. Drop dough evenly into 12 gorgeous mounds on an ungreased cookie sheet.
  5. Bake at 450 for 10 minutes or until golden. Remove and allow to cool. Stores in airtight container for up to 1 week.
  6. Serve with your favorite cup of tea.
