Place watermelon chunks in a large bowl. Sprinkle with feta and fresh-picked mint leaves.
Drizzle with EVOO and balsamic vinegar and toss. Squeeze lemon over the salad for extra flair. Season lightly with sea salt and a few grinds of black pepper.
Refrigerate or serve immediately.
NOTE: Add cut cucumbers, chopped red onion or almond slivers for extra crunch.
